HOW TO MAKE A DOSA

Dosa are crispy,savory pancakes from South India.They are a staple food in that region,but popular in the rest of the country.The pancake is similar in appearance to a crepe but is made with fermented batter of rice urad daal,and fenugreek seeds.After being spooned into a skillet,the batter is spread in a circular motion until it fills the pan;it is drizzled with oil,cooked on one side,and then flipped and cooked for another minute,the folded in half and cooked a bit more before serving with chutneys.
WHAT YOU NEED !!!
- Idle rice - 3 cups
- Urad dal - 1 cup
- Poha - 3/4 cup
- Fenugreek Seeds - 1 1/2 teaspoon
- Water
- Salt - 2 tablespoon (adjust to taste)
- Wash and soak the rice,urad dal and fenugreek seeds in a bowl .
- Soak the poha in a separate bowl with sufficient amount of water for 5 hours.
- Drain the water from the rice,urad dal,fenugreek seeds and poha.Add everything to the wet grinder.
- Grind by adding a water little by little at regular intervals until you get a fine batter.Make sure there are no ingredients sticking to the side wall of the grinder drum.Use a plastic spatula to remove them from the side and grind evenly.
- Add the salt to the batter and use your hand to mix thoroughly.Place the container in a warm place and leave it overnight ( or for maximum of 5-7 hours)for the fermentation to take place.
- Now to prepare the Dosa,heat a tawa.Take a ladle full of batter and pour it on the tawa.Spread it out into a circle using the ladle.Drizzle some oil around the corners and above the dosa.Turn the flame to medium-high and wait until the side touching the tawa turns golden brown.Now flip the dosa carefully using a spatula/turner and turn the flame to low and cook until this side gets cooked
- Transfer the dosa the serving plate and enjoy hot a long with any chutney and sambar.
